Bought a whole bunch of veggies for the week and spent a good portion of Saturday prepping them. I also made the following:
Tomatillo Salsa: again. Still very good.
Blue Cheese dressing: leftover blue cheese, buttermilk, garlic, salt/pepper, a little oil. In the food processor and noms.
Asian dressing: honey, limes, soy sauce, 5 spice powder, sesame oil. good.
Crab cakes: soy, panko, 2 cans of trader joes crab, 5 spice powder, eggs. Turned out really good. Dense but flaky.
Fried tomatoes: salt and pepper sliced tomatoes, dip into flour to remove moisture, dip in beaten egg, dip in panko. Pan fry till golden. Cover with parmesan cheese as soon as you pull them out.
Cornmeal Buttermilk Pancakes: turned out good. I added vanilla. Used this recipe:
BBQ Chicken Quesadilla : shredded store-bought rotisserie chicken mixed with bbq sauce and a little siracha, grilled onions and cheddar cheese. Very yummy. Served with the tomatillo salsa.
